1/2 Lemon (Squeeze the juice)
5-6 pieces Chicken
2 tbsp Olive oil
Black pepper
Salt
- Preheat oven to 190°C/375°F
- Drizzle olive oil into roasting pan.
- Spread the chunks of potato in a single layer in the pan.
- Sprinkle the lemon juice.
- Pour about 1/2 cup of cold water into the pan.
- Arrange the chicken pieces on top and season with plenty of salt and black pepper.
- Roast for 45 minutes or until the chicken is cooked through and serve.
